One of my favorite things about the Halloween season? Pumpkin seeds! I can still remember the way the house would fill with the nutty aroma of the toasting seeds when I was a little kid, and it?s a memory I?m working to pass on to my kids, too.

That said, with five kids we sometimes end up with more seeds than we know what to do with, and the traditional recipe (toss clean, dry seeds with oil and salt, place on a cookie sheet, and stick in a 350-degree oven until golden brown) can get a little boring when you?re dealing with a half-dozen pumpkins? worth of seeds. So this year I decided to jazz things up a bit and go out in search of clever and less-typical ways to use pumpkin seeds:

I?ve encountered sunflower seeds and pepitas in trail mix, but never pumpkin seeds! Claire Robinson?s recipe is a great way to ?stretch out? the seeds and extend that fall flavor longer. I?m planning to make a big batch for school lunches.

Oh, Bobby Flay, I knew I could count on you to take something as simple as pumpkin soup and elevate it to new heights of yumminess. Plus, using toasted pumpkin seeds as a garnish for soup? Genius!

Crunchy, slightly salty and sweet ? the perfect pumpkin seed for people who love caramel corn! Sandra Lee?s recipe calls for a touch of cayenne, which my kids might not appreciate, but otherwise this recipe has ?Halloween Favorite? written all over it.
